We love this recipe; and probably have this two or three times a week.

If you have a food-processor, it only takes a few minutes to prepare. Do try it, it's fantastic! 🥗🥕

Method

  1. Top, tail and peel the carrots
  2. Remove the skin from the onion
  3. Finely slice the onion
  4. Grate the carrot on the finest setting

dressing

  1. Mix all of the dressing ingredients together, ensuring the honey is properly dissolved
  2. Pour over the salad and mix well
  3. Chill, if required, and serve

Variations

Fresh lemon juice and a little zest of lemon makes a good substitute for the cider vinegar.
