Mise en place

  • Preheat the oven, 180° C (350° F - gas 4)

Method

  1. Heat the oil in a frying pan and sauté the peppers and tomatoes for 5-7 minutes.
  2. Meanwhile, in a saucepan, melt the butter and add the flour, cheese, seasoning and Cayenne pepper.
  3. Add the pepper mixture to the saucepan and mix thoroughly with the cheese mixture.
  4. Pour into a greased baking dish and bake in the oven for 30 minutes.
  5. Serve immediately.

Serving suggestions

Goes well with salad.

Variations

Instead of the feta, you could use any crumbly white acidic cheese, such as Caerphilly.
