Caprino stagionato cheese

Produced with pure goats’ milk, from mixed breeds, Caprino stagionato is produced in Rotonda, San Severino, Castelluccio Inferiore and Viggianello in Basilicata.

The cheese is cylindrical, with flat sides and and weighs 500 g – 1 kg. It has as hard, striped, ivory colour rind and a soft, pale-straw coloured interior with a few holes. It is allowed to mature for about 6 months.

A version is also produced in the the Treviso province of Veneto and is matured for one year.
