Gummburner is an extra-matured Cheddar-style artisan cheese made from unpasteurised Holstein cows’ milk.
Cambridge Gumburner cheese starts life as Lincolnshire Poacher cheese, a cheddar-style cheese that is barrel aged for two and a half years. The Cambridge Cheese Company then bring it across the border and mature it for a further two years, thus earning its name.
It is sold by Paul Sutton Adam and David Wilshin of The Cambridge Cheese Company, All Saints Passage, a very quaint location, a few yards from Trinity College, Cambridge.
