Burrino in corteccia is made with cows' milk whey throughout the year in the Italian province of Campania, the best production areas being the best productions in Matese (Benevento), the Monti Alburni (Salerno) and Cilento. It is a stretched curd cheese and is pear shaped with variable heights and diameters and a weight of 200-300g. The "rind" (stretched curd wrapper that contains butter) is glossy, smooth and ivory in colour. The colour of butter varies with the season from yellow to deep yellow. It is matured for up to 2 months and is presented in pairs tied with twine.
