Burrell' is a cows' milk cheese from Lazio in Italy. The cows are reared in the area of the Parco Nazionale d'Abruzzo at 1000 to 2000m above sea level in summer and are moved to about 800m during the winter. In the past, Burrell' cheeses were used for bartering, but nowadays they are produced in limited quantities only to keep alive the tradition and for their aficionados. It is milky white when consumed fresh or dark yellow if matured and has an elongated shape. Small pats of butter are inserted into the cheese.
