Blattsalat mit Zirbenessig-Kürbiskernölmarinade
A very simple salad which caught my attention because of its unusual dressing.
- 80 ml apple juice
- 20 ml Zirbenessig (stone pine vinegar - see below)
- 1 pinch salt
- 2 whole lettuces, washed and shredded, or equivalent in mixed leaves
- 80 ml pumpkin seed oil
- Mix the apple juice and the vinegar with the salt and pour over the leaves.
- Just before you are ready to serve, mix in the pumpkin seed oil.
Pumpkin seed oil can be obtained from Kipferl. Stone pine vinegar is an Austrian speciality and I do not think it can be bought in the UK. From what I can work out, it is mixed with apple (cider) and red wine vinegar, so use a mix of these two vinegars instead.
