- Baskeriu is produced under the Capitoul brand in the Haute-Garonne département of the French region of Midi-Pyrénées. Capitoul is a brand of cheeses made by Les Fromageries Occitanes who are a subsidiary of Eurilait, one of France’s largest dairy co-operatives.
- Hard, pressed, uncooked.
Aroma and taste
- Rich, buttery and nutty. Very similar to Ossau-Iraty, but produced outside of the region specified by the latter's PDO.
Strength and texture
Matured for 6 months. Medium strength.
- All year round
Goes well with fruity red, full bodied red or dry fruity white wines.
In the USA, it can be bought from Specs Liquor Stores in Houston and soon to be sold at the Coborns grocery chain in Minnesota.
