Birdoswald cheese

Birdoswald is an organic, farmhouse cheese produced from the unpasteurised milk of Ayrshire cows by Eric and Dianne Horn at Slack House Farm, near Hadrian’s Wall. It is made to an old recipe which originated in Ireland, but which was taken to Ayrshire back in 1688.

The Cheddar-type cheese is made by taking the warm milk, straight from the cow, and hand-worked for up to 5 hours to produce a 20 lb cloth-bound, mould ripened cheese that is matured for up to 6 months.

Unavailable outside the area, you can buy the cheese at farmer’s markets, Westmorland Farm Shop (on the M6 at Tebay Services) and some farm shops in north Cumbria.
