Primarily for making stuffed parathas but I make this recipe separate as it occurred to me that a spicy potato stuffing might be useful on its own

Method

  1. Boil the potatoes in their skins until a knife penetrates easily
  2. Allow to cool a little
  3. Rub the skins off
  4. Pass through a potato ricer or mash thoroughly
  5. Add the remaining ingredients and mix well
  6. Divide into eight even sized balls
  7. Set aside ready to fill the parathas
