The recipe for a 75% wholemeal flour loaf. There are recipes for other ratios of wholemeal flour in our breadmaker section.
This recipe is suitable for a standard breadmaker, specifically the Panasonic SD253 and similar models.
It will almost certainly work for most breadmakers and is worth trying if you have lost your instruction book!

- 1/2 teaspoon dried active yeast
- 275 g (10 oz) strong wholemeal flour
- 125 g (4 oz) strong white flour
- 1 tablespoon sugar
- 15 g (½ oz) butter
- 1 tablespoon milk powder
- 1 teaspoon salt
- 1/4 teaspoon vitamin C - (from a crushed vitamin C tablet if you don't have powder)
- 300 ml water - or by weight instead of volume, 300 g water
Large loaf
- 1 teaspoon dried active yeast
- 350 g (12 oz) strong strong brown flour
- 150 g (5 oz) strong strong white flour
- 1.5 tablespoons sugar
- 25 g (1 oz) butter
- 1.5 tablespoons milk powder
- 1.5 teaspoons salt
- 1/4 teaspoon vitamin C - (from a crushed vitamin C tablet if you don't have powder)
- 360 ml water
Extra large loaf
- 1.25 teaspoons dried active yeast
- 425 g (15 oz) strong strong brown flour
- 175 g (6 oz) strong strong brown flour
- 1.5 tablespoons sugar
- 25 g (1 oz) butter
- 2 tablespoons milk powder
- 1.5 teaspoons salt
- 1/4 teaspoon vitamin C - (from a crushed vitamin C tablet if you don't have powder)
- 420 ml water
Method
- Place the ingredients in your breadmaker in the order shown
- Select Bake program (5 hours)
- Select chosen crust option
- Select the appropriate loaf size to match the recipe [Medium, Large or Extra large]
- Rise and bake (5 hour cycle)
