The balsamic marinade give the chicken legs a natural blackened look and a sweet, yet sour flavour.
Ingredients

- 4 skinless chicken breasts or 8 chicken drumsticks
- 3 tablespoons of balsamic vinegar
- 2 teaspoons demerara sugar, jaggery or brown sugar
- 1 tablespoon olive oil
- 2 tablespoons of sesame seeds
- A handful of fresh parsley, chopped
- Salt and freshly ground black pepper
Method
- Put the balsamic vinegar, sugar, olive oil and salt and pepper into a bowl and mix well
- Cut a few slashes into either side of the chicken pieces
- Add the chicken pieces to the mixture and marinate for an hour or so in a cool place (cover with tin-foil or cling-film)
- Cook the chicken on a hot, oiled barbecue hotplate for a total of about 15 minutes, turning now and again
- Check they are properly cooked then sprinkle with sesame seeds and freshly chopped parsley
Serving suggestions
Serve hot with a green salad and jacket potatoes
