This quick sauce is a brilliant starting point for a pasta sauce. It's fine as it stands and superb if cheese is added too ( see Variations below).

Method

  1. Heat the double cream in a small pan until it begins to boil.
  2. Immediately reduce to a simmer.
  3. Add the butter, stir and simmer for 10 minutes whilst the pasta cooks
  4. Drain the pasta (not too thoroughly, try and retain some of the cooking water), return to its pan and pour the sauce over the pasta. Season and mix well.
