In general, the cheese has a soft, firm texture, depending on the maturity. The colour varies from white to a strong yellow. It does develop small holes, but no larger than the size of a pea. It has a mild, slightly salty and acid flavour, and to some it can have an aroma of toasted hazelnuts.
