For that extra special baked potato, try salting the potato first, it makes it extra crunchy and not the least bit salty.

Ingredients

- 1 medium baking potato
- 30 g Philadelphia Extra Light
- 25 g mixed salad leaves
Mise en place
- 200° C (400° F - gas 6), [fan oven 180° C & reduce cooking time by 10 mins per hour]
Method
- Place the scrubbed potato in the oven for 1-1 ½ hours until cooked and the skin is crispy.
- Score the top of the potato, open out and fill with the Philly.
Serving suggestions
Serve with the salad leaves.
Variations
Sprinkle with freshly chopper herbs such as parsley or chives
