Method

  1. Boil the potatoes in a pan of water, until tender.
  2. Drain and peel.
  3. Put the sugar in a large, heavy bottomed saucepan and dissolve over a gentle heat.
  4. Simmer until just turning golden.
  5. Add the butter and allow to melt.
  6. Rinse the potatoes in cold water.
  7. Add them to the sugar mixture until nicely glazed.
  8. Turn out into a warm serving dish.

Serving suggestions

Goes well with meat which has been stuffed or garnished with fruit.
