Valluco is an artisan, hard, unpasteurised ewes' milk cheese produced by Elvira Montreal in the Cantabrian village of Ruerrero. The cheese is produced in three weights (400g, 800g and 1.2kg) and three different degrees of maturation (2 months, 1 year and 18 months). They are matured in stone caves. It is possibly the best ewes' milk cheese in Cantábria as a large number of restaurants in the region include it in the one dish or another.
The cheese has a soft, thin, greyish-beige, natural rind and a compact, aromatic interior. It is characterised by its strong aroma, and is buttery on the palate, with an intense flavour, making it a cheese of excellent quality.
