Hi Alberto, thanks for your contribution to Caciocavallo di Agnone. It is nice to have people from all over the world on Cookipedia. The source of my information re pepper was: http://www.formaggio.it/caciocavalloagnone.htm but sometimes I find that that site can be a little confusing as I have never learnt Italian.
Any further contributions you can add to Italian cheese would be most appreciated. I had no idea that Italy produced so many varieties of cheese.

Hi Julia, you are wellcome! Italy is very likely the european country having the greatest number of cheeses that are in a wide ranges of different species. Following the french president general De Gaulle, the excessive number of cheeses of a nation is a clear evidence of political anarchy :-) Ciao, Alberto
