Trou du Cru cheese
Trou du Cru is a very strong, pungent cheese, developed by the cheese maker Robert Berthaut in the early 1980s. It is a soft, pasteurised cows’ milk Époisses type cheese. It is moulded in 60 g rounds, and packaged in a paper cup.
The soft cheese is ivory-yellow in colour, with an orange, edible rind. For three weeks of its five to nine weeks maturation, each small cheese is washed individually with marc de Bourgogne, a strong local alcohol, which imparts a straw-like flavour.
