Torta Montes Toledo is a soft, pasteurised, goats' milk cheese from the Toledo province of Castilla-La Mancha. The production area is the Montes de Toledo which borders Extremadura and indeed the cheese is similar to Ibores which comes from that region.
It is mild, and matured for 2 weeks, with a fine beige rind. The creamy interior is elastic and ivory white, with a pleasant and persistent flavour which is deep on the palate. It takes on more character as it ages and weighs about 1 kg. It is discoid in shape, with a large diameter compared to its height and resembles a flat cake.
