I have spoken to MAS about water baths and they sound a good idea (harks back to the days when both our mothers cooked ghastly 'boil in the bag' rice) But of course, things have moved on since the 70s and sous vide is now very much the in thing. I have sent off for a catalogue for water baths and vacuum joby watsits suited for domestic use, but as i said, holiday and Thermomix must come first!

BTW I had previously looked at Sous Vide Supreme and it does sound promising!

I'm not (yet) convinced - seems very bit faddy to me. Fine if you want to cook loads of food and freeze for later, except I don't like the idea of taking great food and wrapping it in plastic. The last coffin-nail, for me, is the fact that Hector B. thinks it's great. I'd bin it for that reason alone! (I've been searching certain a site for hours to find a great HB cartoon, to no avail. I thought it might strengthen my argument.)
