Cooking time and method

As with all of the Fabulous Baker Brother recipes I have followed so far, be aware that they cook using wood burning stoves, which have no temperature gauge. I believe that they (or the cookbook editors) overestimate the temperature equivalent of a normal oven because this recipe was in great danger of being overcooked. Especially bearing in mind they suggest laying the foil over the joint, not sealing it. Luckily I decided that it should be sealed it remained reasonably moist. It would have been completely dry if it had not been properly covered.

I would also suggest that 8 hours is an absolute maximum time to cook this for.

I am aware that they used a larger joint than I have, however, it would still have dried out, I am certain. --Jerry, aka Chef 08:12, 9 April 2012 (BST)
