They look jolly nice, although not keen on cranberries, apart from juice, nor chestnuts. Wonder if you could adapt the recipe for one of your Ghent days, with some added ingredients, eg, nuts, garlic (naturally) , small bits of veg to make a nut roast type recipe. For you specifically, removing the cranberries and chestnuts (assuming veg .'. no sausagemeat or bacon) then you are left with just garlic & onions :-/

Seriously though, I've never looked at a nut roast recipe, but maybe you could replace the sausagemeat with ground beans or cous-cous /bulgar, though they might turn into to snooker-balls if the cooking time was not altered. Apples wouldn't approve either because of the cranberries, I imagine. :-)

Craberries - whole or chopped?

Having made this, I think it would be improved by chopping the cranberries first.

The whole cranberries are fairly large so you either get a lot of cranberry, or none at all. Chopping them would give better distribution and probably aid soaking up the port.

The recipe has been adjusted to take this into account.
