Tabor is made from pasteurised cows' milk in the Carso area of the Italian province of Trieste. It is a straw coloured cheese with sporadic small holes and a smooth rind and delicate aroma. Cylindrical in shape, it has straight sides and flat faces, with a height of 7 cm and a diameter of 27-30 cm. It is matured for about 30 days.
