Use this Thermomix recipe as a base for all your meringues

  1. Place the Butterfly on the blades
  2. Put the egg whites and sugar into the bowl 4 minutes / 50° / Speed 3½
  3. Then program 4 minutes / Speed 3½, no temperature and use immediately after whipping or it will sink.

Variations

There are many types of meringue. For all of them put the Butterfly on the blades, add the whites, a pinch of salt, some of lemon juice or vinegar and program 1 minute per egg white Speed 3½.
