Strica is made with scraps of Montasio or Latteria cheese throughout the Italian region of Friuli-Venezia Giulia. The pieces of cheese are taken from the boiler and put into moulds to take the traditional shape. The compressed forms in the molds may show, depending on the fermentation, smudges that protrude from the edges of the moulds themselves. Thus, these excesses of cheese are trimmed to give a uniform and smooth appearance and it is then ready for consumption.
