Stracchino toscano cheese
Stracchino toscano is a soft cheese from the town of Sorano in the Tuscan province of Grosseto. Ferments and rennet are added to pasteurised milk and the curd is cut several times. The urds are transferred to moulds, which stacked one above the other, are turned several times until the optimum acidity has been reached. After being immersed in brine, the cheese is left to mature in cells at a temperature of 4°C. It is straw-coloured, has a slightly sweet flavour and a delicate aroma. It is packed mostly in pats of 250g.
