Sierra de Cádiz aka Queso de las Serranías de Cádiz cheese is produced from unpasteurised or a mixture of unpasteurised and pasteurised goats’ milk in the mountains of the province of Cádiz.

It is a fresh, cylindrical cheese and rindless. It has a white colour and a soft, slighty moist, firmish texture and a mild, sweet aroma. It has a very sweet, milky and slightly salty flavour and it can weigh between 500 g and 2 kg.
