It is Denmark’s national cheese and has a supple, elastic texture, with a few irregularly-sized large holes. It has a yellow interior and its flavour is milder than most Swiss cheeses. It is produced in disks or blocks, takes 3 to 6 months to mature and when properly aged has a sweet and sour pungency.
