Rigotte du Forez cheese
Rigotte du Forez is a tiny cows' milk cheese from the Loire département of the Rhône-Alpes. The milk can be pasteurised or unpasteurised and historically goats' milk was used. It is semi-soft with a slightly mouldy bright orange natural rind and is matured for 2-3 weeks. Some of the cheeses are macerated in white wine. It is consumed throughout the year and weighs 65g. Cylindrical in shape, it has a diameter of 5cm and a height of 3cm.
