Ricotta stagionata di pecora cheese

Ricotta stagionata di pecora is a ewes' milk cheese which is a traditional product of the entire region of Abruzzo in Italy. It is produced from the whey of the milk. Although conical moulds are generally used, the cheese can come in various shapes, weights and sizes and the ochre to black exterior of the cheese is marked by ridges from the baskets in which they are moulded. Matured for 30 days, the interior is white in colour and the texture varies from creamy to chalky.
