Ricotta di pecora grossetana cheese
Ricotta di pecora grossetana is a soft, fresh ewes' milk cheese from the Tuscan province of Grosseto. Whey is heated to force the ricotta to the surface which is then collected and placed in perforated moulds to allow drainage. The moulds are then placed in cold storage. The cheese is produced from November to June. It is white with a creamy, almost spongy texture, a sweet and delicate taste and a strong aroma of milk. Its shape is a truncated cone and it weighs around 1.3kg.
