Ricotta calabra cheese
Ricotta calabra is made with the unpasteurised whey of cows' and/or ewes' and goats' milk, which is produced from October to July throughout Calabria. It has a variable height and diameter and can weigh anything from 80g-1lg. It has a truncated cone shape and a soft, sticky texture, is white in colour and has a delicate flavour. It is consumed fresh.
