Ricotta affumicata cheese
Ricotta affumicata is made from cows' milk and/or goats' milk. It is matured for about a month and is a truncated cone with a variable height and diameter. It is hard and greyish-brown from being smoked and the flavour is intense. The smoking process takes three days. It is produced throughout Calabria from December to June-July.
