Reblochon aka Reblochon de Savoie cheese
The soft washed-rind cheese is produced from the milk of the Abondance, Tarentaise and Montbéliard breeds and comes from the evening milking. It measures 14cm across and 3–4cm thick, has a soft centre with a washed rind and weighs an average of 450g. The rind is covered with a fine white mould and is matured for six to eight weeks.
Reblochon has a nutty flavour that remains in mouth and is an essential ingredient of Tartiflette, a Savoyard gratin made from potatoes, cream, onions, and bacon. It is also a key ingredient of the Valtho Burger which is sold in Val Thorens.
