Raviggiolo di latte vaccino del Mugello is a soft, fresh, cows' milk cheese from Palazzuolo sul Senio, in the province of Firenze in Tuscany. It is rindless, cylindrical shaped and weighs about 1kg. White in colour, it has a slightly sour, yet almost sweet flavour and a milky aroma. The cheeses are packaged in parchment paper and / or heat-sealed trays.
Pasteurised milk is inoculated with thermophilic lactic cultures and salt and liquid natural rennet (fig latex or dried lamb's stomach) is added . After successful coagulation, the curd is manually transferred directly into moulds and placed in cold storage at 4°C. The cheese is delivered the same day or the following morning.
