Queso Suave de Oveja cheese
Suave de Oveja is produced by Los Corrales, in Almedijar, a town in the province of Castellón, which is located in the natural park of the Sierra de Espadán. It is made with pasteurised ewes’ milk and lamb rennet and is matured for 40 days. It comes in cylinders weighing 1.2kg.
The washed rind is yellow due to its being rubbed with olive oil. The interior is light yellow in colour and has irregularly distributed holes throughout. The texture is supple and firm. It has a pleasant, lactic aroma and the sheepy, sweet flavour typical of Mediterranean cheeses. It has a long aftertaste reminiscent of nuts.
