Poudre de Colombo (Colombo powder, Caribbean curry powder or French West Indies curry powder) is a spice blend used to flavour fish, meat and rice dishes.

In common with most spice blends there are many variations. Some ingredients are likely to be paprika, cumin, coriander, nutmeg, ginger, black pepper, star anise, cardamom, cloves, mustard grains and saffron

There are no chillies, the heat is derived from peppercorns and mustard grains.
