Pecorino di Palesio cheese

Pecorino di Palesio is a ewes' milk cheese, produced almost all year round in the area of Castel San Pietro in Emilia-Romagna. Matured for up to one year, it is sometimes rubbed with oil and tomato sauce. It is cylindrical in shape and weighs from 800g-2kg. When fresh, it has a smooth, wild rind, becoming wrinkled as it ages. The interior is compact and has an intense aroma and spicy flavour.
