Pecorino del Casentino cheese
Pecorino del Casentino is a ewes' milk cheese produced in the province of Arezzo, in particular Casentino in Tuscany. The matured cheese weighs 2.5 kg, is pale yellow in colour and has small holes. After maturation, which lasts about 120 days, the cheese develops an intense flavour and is slightly spicy. The fresh version weighs 1 kg and has a compact, white texture and the minimum aging period is 20 days.
