Pasiega is produced in the valley of the River Pas, located to the south-west of Santander. The cheese, which is also known as Garmillas, is produced with cows’ milk and is available fresh or slightly matured.

Having an irregular cylindrical shape , the cheese has a light, mouldy rind. The interior is yellow, soft and striped, with white eyes. The flavour is creamy, soft and delicate and the cheese is weighs 500 g

Pasiego cheese is used for the manufacture of Quesada Pasiega a famous Cantabrian pudding.
