Pas de l'Ayau cheese
Pas de l'Ayau is an unpasteurised cows' milk cheese produced by M. Gérard Dubus and his colleagues at Pas de l’Escault farm about 30 miles south of Lille in the Nord département of the Nord-Pas de Calais region of France. It is an artisan, soft, rind-washed cheese and is matured for 2 months, during which time, it develops a golden rind. It is 10cm square, has a height of 3cm and weighs 400-450g.
