Paddaccio cheese

Paddaccio aka Peddaccio is an unpasteurised, fresh goats or ewes’ milk cheese produced for the Easter festivities in the province of Cosenza, in particular the area of the Ionian Cassano and the Calabrese Pollino.

The cheese is sphere-shaped with a diameter of 15-18 cm and height of 6-7 cm. It weighs around 500 g, is rindless, with a slight roughness on the outer surface. The interior is soft, milky white, and has a sweet taste and aroma. It is unseasoned.
