A nice spicy relish that is a good accompaniment to most spicy dishes.

  1. Roast the chillies as described here
  2. In a mortar and pestle or a coffee grinder, grind the allspice, peppercorns and oregano until coarsely ground
  3. Slice the onions very thinly (a food processor is good for this) . Add to a bowl
  4. Skin and de-seed the chillies, slice finely and mix into the onions
  5. Stir in the spices and the crushed garlic and mix well
  6. Add the vinegars and season with salt
  7. Refrigerate for at least 12 hours to allow the flavours to mingle
