The cheese is sweet and delicate and pale yellow in colour. It has a soft texture, and a smooth rind. The sizes range from 1.3 to 1.5 kg.
The milk is thermised at 68°C in vat and left for about 40 minutes. Rennet is added for the formation of the curd and, after cutting it, the curds are distributed manually into moulds to drain and then salted. The cheeses are matured in a fresh and airy environment, on wooden planks of poplar.
