Manteca is a dairy product more than an entire cheese. It is produced throughout the year and consists of butter and cows’ milk. It has a dual structure: an outer, flexible, pale yellow, spun cheese and an internal, creamy white butter.
The ‘cheese’ is shaped like a full, draw-string purse and has a sweet and buttery taste. It weighs between 400 g and 1.5 kg. It is also known as Butirro or Burrino.
