Lou Rocaillou cheese

Origin

The Lou Rocaillou is a related to the more the Pérail. It is produced in Languedoc-Roussillon with unpasteurised ewes' milk and was originally produced on every farm for personal consumption on the major limestone plateaus and in the Millau region.

It is consumed fresh or slightly matured. Matured for 2 weeks, the it can be kept to develop taste and flavours. The cheese is smooth, thin, soft and slightly creamy, homogeneous, and rind has a slightly bloomy white rind. It is uncooked, unpressed and weighs 80g.
