Gorwydd Caerffili
Gorwydd Caerffili cheese is made from unpasteurized cows' milk and matured for 4 to 12 weeks, in comparison with Caerphilly cheese (8 to 14 days).
It has an off-white band in the centre turning orange towards the edges, where there is a dark, almost black rind. It is less crumbly the longer it matures.
It has a sharp smell and a slightly sour, but pleasant taste.
Gorwydd Caerphilly is made at Gorwydd Farm near Tregaron, Ceredigion, Wales by Todd Trethowan and family.
