Fromage des Monts de Lacaune cheese

Fromage des Monts de Lacaune is a group of cheeses produced by Gilles, Jean-Luc and Monique Fabre of Laiterie Fabre Frères in Viane (Tarn) in the Midi-Pyrénées region of France. By collecting 3.6 million litres of milk per year, from 19 cattle farmers, the Fabre family produces 300 tons of cheese. The cheeses are as follows:

Monts de Lacaune tradition: Cows' milk cheese. Ten months to mature. Ivory-coloured interior with tasty flavours of nuts, dried fruit and nuts. A competitor for Comté cheese.

Monts de Lacaune brebis: Ewes' milk cheese. Six months to mature. Pressed, very soft on the palate. Accompany with a feast of red fruit preserves.

Monts de Lacaune chèvre-vache: Mixed milk cheese (goats' and cows'). Six months to mature. Pressed and melts in the mouth. The addition of goats' milk enhances the flavour. Accompany with preserves.

Monts de Lacaune: Semi-cooked, soft with a strong, honest flavour franc (36% fat in dry matter). Milk type unknown.
