Formaggio del Buongustaio cheese
Formaggio del Buongustaio is a spreadable ewes' (70%) and cows' (30%) milk cheese produced in Cragnoleto in the province of Teramo in Abruzzo. The cheese is shredded, placed in wooden troughs, kneaded by hand, placed in glass jars filled with liquor and left to mature for at least 60 days in a cellar. It can be matured for up to 12 months
